This coffee is grown 1889 meters above sea level in the beautiful hills of San Juan Sacatepéquez region of the Sierra Madres on the farm Concepción Pixcayá. We have roasted this coffee to bring out the rich flavors of sweet grilled peach, silky caramel, and the creamy nuttiness of marzipan.
Founded in 1926, Concepción Pixcayá is a fourth-generation family farm that is now overseen by great-great-great grandson Manuel Zaghi Miron and his mother Maria Cristina Mirón de Zaghi. The high altitude and cooler weather make it ideal to grow macadamia nuts, cypress forests and other flora that’s beneficial to growing great coffee.
There are no herbicides used on this coffee, and the farm practices sustainable agricultural practices. The coffee is handpicked and put through a washed process where it ferments in a tank for 24 to 36 hours. Then it is washed and sun dried out on patios.
As part of the farm’s sustainable production practices, the honey water that is the result of the washing and fermentation process is recirculated and deposited in a separate pond so that the environment is not contaminated. This water is naturally purified by nature and seeps back into the water table to sustain the environment.
