“I always wanted to visit Casablanca.” Liliana Caballero dreamt of one day owning a coffee farm, after growing up helping her father work on his vegetable farms. In 2006, her dream came true. She fell in love with Hacienda Casablanca in Santander, Colombia, an idyllic estate that dates back to 1860 and is spread across 150 hectares (370 acres).
Liliana’s farm is a stunning example of Colombia’s natural beauty. The freshwater from its streams, which flows from the mountains, is used to process their coffee harvests, most of which is depulped, fermented, and fully washed in the tile channels of their wet mill. Large parts of the farm have been left uncultivated. They plant bamboo and other trees to protect the source of the streams. Wolves can be seen lingering in the nearby woods.
This Gesha coffee is unlike anything you’ve ever tasted. This bean reflects the wonder and beauty of the environment it grows in. The flavors are dynamic and varied. You would normally need to blend together several different coffee origins to achieve the plethora of sensations you’ll find in this single cup.
