This Fair Trade Organic Mexico Grapos Reserve comes from the region of Chiapas, Mexico-- an area of rich biodiversity 100 miles from the Guatemalan border. We roast this coffee to a medium level to bring out its natural sweetness of graham cracker, pop of apricot, and tangy complexity of tamarind.
The GRAPOS CO-OP was created in 2007 and made a tremendous impact for the small traditional farmers by creating the avenues and resources to get their harvest not only to the market but certified. This allowed them to have competitive coffees in the international market. It has gone from the initial producers of 90 to well over 2700 members!
During the harvesting time, December to April, the members of GRAPOS process their coffee in small batches on their own farm. After the ruby-red ripe cherries are picked, they pulp them that day and ferment them for roughly 24 hours. The coffee is then washed and spread on patios to dry before heading to the village to be exported.
