We are extremely excited to be one of the first roasters to showcase this special micro-lot from the Luis Duran farm, La Pradera, and one of the founding members of the Asopap Co-op in Tolima Colombia.
Coffee runs deep for Luis and his family. Luis’ parents were also coffee farmers, and Luis has passed this tradition down to his 3 children. Together with his son Edilson, they have been experimenting with their micro-lots by using innovative processing techniques and prolonged fermentation. This micro-lot has been collected by hand and fermented in the cherry for 48 hours. Then the coffee is de-pulped and fermented for an additional 12 hours. Before the final process of drying the beans, they are slightly washed and undergo an anaerobic fermentation for another 60 hours.
